When I first started to phase out meat, I was intimidated by the massive amount of mock meat products about. I’d tried a vegetarian mince before and it was disgusting. I knew the best way forward was to gingerly dip my toes in and try one or two products a week, gradually building my veggie repertoire. Since I started cutting back on my meat consumption two years ago I’ve tried and tested many meat-like foods. These are my absolute favourites – my freezer is rarely without them and once you try them, yours won’t be either.
National Vegetarian Week is from 15th-21st May. It’s all about trying new things and celebrating delicious vegetarian food. One of my favourite bulk cooking meals is this super easy vegan vegetable curry. It’s very cheap to make and freezes well. I make it mild enough for the kids but if you prefer a hotter curry then you can add more spice. This curry is vegan, gluten free and (if you use xylitol) cane sugar free. Yum!
I’ve got a stinking cold at the moment and like most people in need of comfort, my go-to meal is a piping hot bowl of soup. Unlike many of my recent batch cooked meals, none of this soup is going to make it to the freezer! It’s been my lunch every day since it was made and it’s the first soup I’ve made in a LONG time has had a thumbs up from two our of three children.
