5 vegan recipes that are just perfect for The Big Lunch
These vegan recipes are easy, cheap and adaptable. All of the recipes can be made gluten free with a few simple adjustments too.
First up is this vegan greek pasta salad from Vegan Heaven. We probably wouldn’t use black olives, but the rest of it looks lovely and I’m really excited to try my hand at vegan feta.
My vegan egg mayo recipe is the perfect sandwich filling for any occasion. It makes a large batch, so absolutely best for gatherings with the neighbours!
This vegan rhubarb cheesecake is possibly the most gorgeous vegan dessert I’ve ever laid my eyes on – I featured it in my In Season Vegan: May round up and I’ve been in love with it ever since!
One of the first vegan swaps I ever made were these vegan pizza quesadilla. There aren’t many places on my plate for vegan cheeses, but these handle the flavours well. It’s one of the few meals that all of my children like! Best paired with strong flavoured sauces and whatever mini fillings you fancy.
This pesto potato salad from Lazy Cat Kitchen looks perfect for a long, lazy summer picnic with friends. You could have it with my wild garlic pesto, or if you don’t fancy pesto you could drizzle it with wholegrain mustard and rice malt syrup.
