Superfood Banana-Almond Smoothies & Ice Lollies
Many times I have tried to get my children in on the smoothie trend. It seemed to work at first, with my banana-vanilla breakfast smoothies going down a treat. For some reason, and I still don’t know why, this was very short lived. Smoothies don’t go down very well with the kids anymore!
With my youngest son almost completely cutting out fruit, getting the right nutrients into his body has been a challenge. Green might be his favourite colour, but if he had his way it would be fishless fingers and baked beans for every meal.
The weather doesn’t seem to know what it’s doing at the moment, does it? I was recently sent some items to use in a recipe by Indigo Herbs in Glastonbury. The initial plan was smoothie ice lollies – at the time, the weather was scorching and just the thought of it made my mouth water. The very next week? Torrential rain, of course! Just another British summer!
With this in mind, I decided to make smoothies and ice lollies. This creamy, delicious mix lends it’s flavour well to either variation.
The SuperGreens powder contains Wheatgrass, Barleygrass, Moringa, Spirulina and Chlorella. It’s high in vitamins A, C and E which makes it a great addition to any cupboard! The bananas and banana powder make this high in potassium which is vital for heart function and electrolyte levels. It makes the smoothie a lovely dark green. For an even creamier flavour, use cashew butter in place of the almond butter.
Ingredients (1 smoothie and 4 child sized ice lollies)
- 1 banana, sliced
- 300ml brown rice milk
- 1 tbsp almond butter
- 2 tbsps dark maple syrup
- Vanilla essence, to taste
- 1 tbsp SuperGreens powder
- 1 tsp banana powder
- Add all ingredients into your blender and blend until smooth.
- If you’re making ice lollies, pour into ice lolly moulds and transfer to the freezer.
- Freeze for at least 3 hours or overnight.
